Perfect Pasta Dish (From Scratch!)

The air is crisp and cool, the foliage is changing as we speak, and it's finally time to embrace the first weeks of the new year. In honor of the cool weather, here are some foolproof and easy recipes for the perfect pasta to make the months to come just a little bit more enjoyable. 

The Pasta

Prep Time – 45 minutes ; Cook Time – 15 minutes

I’ve always been intimidated by homemade pasta. Everyone would say that it was too difficult, too messy, and a waste of time. But then I made my own, and it wasn’t anything like they had said! Simple to make with an amazing results, and without even using any fancy machinery, this pasta recipe is one of my favorites, even for an absolute beginner. Enjoy!


2 cups all purpose flour

1 tbsp olive oil

1 tsp salt

3 large eggs

Step 1 : Put your flour in a large bowl and create an indentation in the center, large enough for your eggs to rest in. 

Step 2 : Crack your eggs into the indentation in the flour, (if this is too difficult, crack them into a small bowl and then pour it into the indentation), and add salt and olive oil.

Step 3 : Break the yolk of the egg and mix it together, making sure to keep it inside the indentation in the flour.

Step 4 : Gently fold the flour from the outside in and combine it with the egg mixture. Knead until you have a rough ball, and transfer it from the bowl onto a cutting board. (Make sure to dust the board with flour first).

Step 5 : Knead the dough for 8-10 minutes, or until it becomes smooth and yellow. Use motions going from left to right and vice versa to get all the lumps out. 

Step 6 : Using a pasta cutter, (if you don't have a pasta cutter use a sharp knife), split the dough into quarters and set three of them aside. Then take your quarter and knead it into a ball again. 

For the purposes of this recipe, I will be making Fettuccine. However, you can use the same recipe to make any other pasta and just roll it out differently

Step 7 : Using a rolling pin, roll the dough out into a thin sheet. (If you hold it up to the light you should be able to see a glow). Make sure it’s even all the way around. 

Step 8 : Slice off the top and sides so you have a long rectangle. Then take your knife (a pizza cutter also works) and slice it into strips 1 cm long. (make sure to slice along the taller end so you get longer pieces). Continue until you have finished slicing the entire rectangle. 

Step 9 : Sprinkle flour on both sides of the noodles and fold them in half twice. Set aside.

Step 10 : Repeat steps 6 – 9. (Knead the scraps from the previous quarter into your new ball). 

Step 11 : Take a large pot and fill it with water, adding salt first. Bring it up to a boil and put your noodles into it. (Make sure to separate the noodles first). Cook for 10 – 15 minutes. 

Homemade Tomato Bisque

Prep Time – 15 minutes ; Cook Time – 30 minutes

This simple and easy to make soup is so versatile, and can be eaten in multiple ways. Perfect for a rainy day or any time when you want a warm, rich, soup, this Tomato Bisque is for you. 


1 large white onion

6 small vine-ripe tomatoes (any work EXCEPT for cherry tomatoes) 

½  cup half and half

½ cup water

Dried oregano

Dried Basil

Salt and Pepper to taste

Garlic Powder (optional)

Chopped Garlic

1 tbsp olive oil

¼ cup shredded Parmesan cheese

1 cup tomato paste (you can make this yourself if you want)

Step 1 : Rinse your tomatoes and dice them. Set aside.

Step 2 : Dice your onions, making sure to take off the first layer of skin. 

Step 3 : On medium heat, place your onions in the pan and sautée them until golden brown. (make sure to add the oil to the pan first)!

Step 4 : Reduce the heat to low and add your tomato paste, chopped garlic, basil, oregano, and ¼ cup water. Place the lid on the pan and let simmer for 5 minutes.

Step 5 : Add in your diced tomatoes and bring the heat back to medium. Stir until most of the water has evaporated.

Step 6 : Transfer the contents of the pan into a blender and blend until smooth. Then, add in your half and half slowly, blending between intervals. 

Step 7 : Serve warm in a nice bowl; salt and pepper to taste.
